Cabbage casserole

Every Christmas at my Aunt Sara's house, she would make cabbage casserole and I love it. It's cheesy goodness, at-least as good as it gets when eating cabbage. My Mom and Dad say you must always eat cabbage on News Year day, so these two things go perfectly together. The internet says not to do laundry on News Years day and I don't know about that one, but it sounds like fair advice.

When Aunt Sara makes the cabbage recipe she had all these hard steps, like boiling the cabbage and onion first then baking it, but I am a lazy cook.  I put it all in a casserole dish and just cook it longer.

1 large head a cabbage cut up ( this stuff super shrinks down)
1 large onion chopped
1 can cream of mushroom
4 tablespoons soft butter
8 oz velvetta chunked
salt and pepper

Throw all the above in a large casserole dish and stir a little. The cabbage will be heaping and thats ok. Cover with foil bake at 350 for 1 hour 20 min, stirring occasionally.

Take off the foil and add 1 or 2 cups bread crumbs stir in a little, but leave mostly on top and bake 20 more minutes.
