Dear Juniper

We gave my mom an ulta sound picture in a card. That is how she knew we were expecting you. It was really just a picture of my womb with a dot in it. You were that dot. We did not know if you were a boy or a girl, but I knew I loved you completely. We did not know that you would have strawberry blond hair, that you would love to dance or that you often climb in places that seem impossible, but I knew that you were mine and I loved you and wanted you so much. I already envisioned you in our little family and loving your sister. You are amazing Juniper, already at just the age of one. You have this tenacity about you. You go at everything full throttle. You are a Daddy's girl. You crawl to him when he gets home and nothing will make you happy until you are in his arms. Lucky for me after he is home awhile you welcome my arms again and give me the snuggles I so love. You cuddle more than you sister did and I love that about you. I rock you to sleep and just hold you and you let me. I hope I get at least another year of those times when you fall asleep in my arms because they are so special. You have grown by leaps and bounds in the last year.  It is hard to believe that you are already one year old today. You are loved by everyone that meets you.  I love you Juniper rose. You have blessed our family with your presence. Thank you for being my daughter.

Veggies

So it's the year of the veggie. Thats my New Years Resolution to eat veggies. I used to eat microwaveable veggies, but this year we are eating real veggies every night and so far so good. Below are a few of my favorite recipes.

Potty training

I won the potty training lottery.  I gave Kai a heads up a few days before we were going to start trying and then put undies on her one morning and that was it. She started going on the potty and got one    M&M every time she went. She had a few accidents, but not many. She still wears a diaper at night, but she stays dry all day. Kai is amazing. I did listen to my Mom and started training her during the week the Almanac suggested. I did not know this was a thing, but I guess it is and who am I to say it does not make a difference because for me it was easy breezy.  Kai, I would like to post a slew of funny pictures on the potty, but I will save you future embarrassment. You are welcome.

Cabbage casserole

Every Christmas at my Aunt Sara's house, she would make cabbage casserole and I love it. It's cheesy goodness, at-least as good as it gets when eating cabbage. My Mom and Dad say you must always eat cabbage on News Year day, so these two things go perfectly together. The internet says not to do laundry on News Years day and I don't know about that one, but it sounds like fair advice.

When Aunt Sara makes the cabbage recipe she had all these hard steps, like boiling the cabbage and onion first then baking it, but I am a lazy cook.  I put it all in a casserole dish and just cook it longer.

1 large head a cabbage cut up ( this stuff super shrinks down)
1 large onion chopped
1 can cream of mushroom
4 tablespoons soft butter
8 oz velvetta chunked
salt and pepper

Throw all the above in a large casserole dish and stir a little. The cabbage will be heaping and thats ok. Cover with foil bake at 350 for 1 hour 20 min, stirring occasionally.

Take off the foil and add 1 or 2 cups bread crumbs stir in a little, but leave mostly on top and bake 20 more minutes.
